This creamy coconut chia pudding is very easy to make and perfect for whenever you are feeling lazy or running late on those busy mornings.

Minutes: 10 minutes (then leave overnight)
INGREDIENTS
- 250 ml of coconut milk
- 1/4 cup of coconut water
- 2-3 tbsp chia seeds
- 1 tsp vanilla extract
- 1 – 2 tsp of honey/maple syrup
INSTRUCTIONS
- Mix all the ingredients together and give it a good stir until combined.
- Leave it to thicken for about 15 minutes. Then stir again to make sure everything thickens evenly. Repeat the process once or twice.
- Cover with plastic wrap and store it in the fridge overnight (or at least 2 hours)
- Serve with fresh fruit, nuts, yogurt, and honey/maple syrup. Enjoy!
